Vibrant and fresh Sauvignon Blanc from the Dolomite Alps with steely minerality and flavours of lemon zest, lemongrass and cucumber
This Sauvignon Blanc has lots of personality with its fresh, steely and mineral flavour. It comes from an historic estate, known since the 1700’s, in Bucholz di Salorno. The large Bauernhof (farmhouse) and a vineyard are perched high on an Alpine plateau, at 600m above sea level. Wide temperature swings between hot days and cold nights help the grapes to develop aromatic complexity and retain zesty acidity.
Winemaking
Sauvignon Blanc grapes are harvested by hand and placed into small boxes, thus protecting bunches from any damage. After soft pressing, the grape juice is left to sit a little longer to let gravity take its course. Particles drop to the bottom, and are then filtered out. Fermentation takes place at a controlled temperature in stainless steel tanks. The wine then ages on its fine lees for six months.
Tasting note
Pale lemon colour. Born on a high-altitude plateau in the Dolomite Alps, this Sauvignon Blanc opens with aromas of lemon zest, lemongrass and cucumber. The palate reveals notes of mint, sage and green bell pepper, leading to a clean zesty aftertaste. Freshness in a glass.
