Flavourful Chianti Rùfina. Ripe black cherry, a touch of herbal bitterness, sandal wood and spicy chocolate.
This organic Chianti Rùfina is full of sweet cherry and chocolate flavour, despite being bone-dry wine with less than 1% residual sugar. “La Fuga” comes from the picturesque mountains around the tiny village of Dicomano, 10km north of Rufina. Here, small parcels of Sangiovese are planted on south-facing slopes of gently rolling hills, sprinkled amongst olive groves and pine trees.
Chianti Rufina is the most highly prized sub-zone of Chianti DOCG. It produces the most powerful and long-lived Sangiovese wines, which can truly compete with Chianti Classico. This Chianti Rufina by Borgo Macereto is gentler, with a sweet and supple taste.
Winemaking
“La Fuga” is pure Sangiovese, harvested by hand in mid-September at an altitude of 350 metres. The grapes are not over-ripe, and offer a lovely level of freshness and longevity. The Sangiovese juice is fermented for 8-9 days in stainless steel tanks, at a controlled temperature of 24°C. After fermentation is finished, the newly-made wine remains in contact with its skins for another five days – absorbing more of Sangiovese’s natural cherry flavours.
This Chianti Rufina is matured for 11 months – almost two times longer than the required minimum. Interestingly, this maturation happens in stainless steel tanks, helping to maintain a purity of fruit flavour.
Tasting notes
Delightfully fruity, “La Fuga” offers supple flavours of black cherry with a pleasant sour note, aromas of dry Tuscan herbs and spicy chocolate. It has lovely undertones of sandal wood, leather and black pepper, with a long bitter chocolate finish.
This wine is matured only in stainless steel tanks, and not in wooden barrels. Because of that, it’s not overpowered by oak. Instead, this Chianti Rùfina offers the drinker the natural flavours of the grape – along with the scents of the pine-covered hills, olive groves, and hot Tuscan soil.
